Il Fumo sets its table inside a grand two-storey villa on Rama IV, a house built in the early twentieth century for members of the Thai royal family and now given over entirely to fire and smoke. It is one of Bangkok's more atmospheric European rooms - a restaurant that trades on provenance, flame and a genuine sense of place rather than on a fashionable address.
The old villa carries the mood: a 90-seat indoor room and a terrace, period character intact, wrapped around a kitchen built for wood and charcoal cooking. Chef-partner Nelson Amorim, who cooked at Otto e Mezzo Bombana in Hong Kong and Macau, brings the flame traditions of his native Portugal, working over house-made charcoal.
