One-Michelin-star icon of Thai fine dining at COMO Metropolitan Bangkok, in Sathorn
Nahm is a long-standing icon of Thai fine dining, holding one Michelin star at the COMO Metropolitan in Sathorn. It carries the name of chef David Thompson's original Nahm in London, which won the world's first Michelin star for Thai cuisine in 2001; Thompson relocated the restaurant to Bangkok's COMO Metropolitan in 2010, and since 2019 it has been led by chef Pim Techamuanvivit, the self-taught force behind Kin Khao and Nari in San Francisco.
Its method sets it apart: the kitchen draws directly on old Thai recipe books, reviving boldly flavored, deeply traditional dishes that most modern restaurants no longer attempt. Nothing here is softened for a foreign palate - garlic, shrimp paste, chili and lemongrass are wielded with conviction and built into elegant, precise plates.
Signatures show the range. Pu Sorn Klin pairs blue swimmer crab with coriander, pickled garlic and peanuts on a rice cracker; miang nopakao wraps river prawn, chicken, green mango and snake fruit in a betel leaf; and robustly seasoned curries, salads, relishes, soups and stir-fries fill out a menu of real depth and heat.
It is also one of the few Michelin-starred Thai rooms in the city you can book on OpenTable, which makes an unusually serious kitchen unusually accessible. Come hungry for genuine Thai intensity, not a tamed version, and reserve ahead for dinner.
