Potong opened in 2021 inside chef Pichaya "Pam" Soontornyanakij's own family building, a Sino-Portuguese shophouse in Chinatown that served as her ancestors' home and traditional Chinese pharmacy for more than a century. The restaurant is named after that pharmacy, and Pam layers her Thai-Chinese heritage into a progressive tasting menu built on a philosophy of five senses and five elements of taste.
She earned her first Michelin star in 2023, was crowned Asia's Best Female Chef in 2024, and became The World's Best Female Chef in 2025; Potong ranks number 13 on Asia's 50 Best. The kitchen occupies the lower floors while the acclaimed cocktail bar Opium sits up top, so a dinner here easily becomes a full evening.
Courses arrive with real storytelling and a confident use of Chinese ingredients, each dish prepared from scratch and tied back to the family history embedded in the walls. The tasting menu changes with the seasons, following Pam's five senses and five elements framework through course after course.
It is one of the hottest and most personal tables in the city, and seats go quickly. Book well in advance, set aside a full evening, and finish with a cocktail upstairs at Opium.
