R-Haan - the name plays on the Thai word for food - is chef Chumpol Jangprai's two-Michelin-star tribute to royal and heritage Thai cuisine in Thonglor, and the most complete royal-Thai experience in the city. Chumpol is one of Thai gastronomy's most respected figures, and his mission here is preservation and elevation instead of reinvention: the cooking of the old courts, kept alive at the highest level.
The entire restaurant is conceived around the art of Thai dining as the royal courts once practiced it. Dishes arrive in traditional Thai ceramics, in courses and ceremony designed to echo how Thai royalty ate, and the room is grand without tipping into stiffness - formal in its rhythms but warm in its welcome.
The menu celebrates regional flavors from across Thailand with exacting refinement. Tom yum goong is finished tableside with a syphon, charcoal-grilled mackerel comes with an aromatic herb sauce, and flourishes of gold leaf appear across the progression, each course a small piece of theater as much as a plate of food.
