Gaggan Anand's progressive Indian restaurant on Sukhumvit 31
Gaggan Anand is the single biggest name in Bangkok dining, and his eponymous flagship is the hottest table in the city. After a headline-making split from his original restaurant, he reopened this room with a 14-seat chef's counter and a menu that runs past twenty courses. In 2025 it was named the best restaurant in Asia, and in 2026 Michelin finally added a star.
The room is a stage. Just fourteen seats face the counter, close enough that Anand himself orchestrates the night - part chef, part conductor, part provocateur - turning dinner into pure theater, not a quiet meal. The energy is fast, loud and joyfully irreverent by design.
The cooking is progressive Indian that borrows freely from Japan, France and Thailand, and it comes with rules of its own: courses are listed only as emojis, and diners are coaxed into eating much of the meal with their hands. It is a deliberate rewiring of what fine dining is supposed to feel like, playful and precise at once.
