La Bastide Saint-Antoine is chef Jacques Chibois's Michelin-starred country house above Grasse, the world's perfume capital, half an hour up from Cannes. It is a Relais et Chateaux property, a member of Les Grandes Tables du Monde, and a genuine destination: an 18th-century Provencal bastide set in an ancient olive grove, with a handful of rooms and a terraced garden that dines out toward the hills and the distant Mediterranean.
Chibois has held the place since 1996 and remains chef-patron, one of the defining voices of Provencal cuisine du soleil. He is a pioneer of olive-oil-forward cooking, to the point of authoring a book on it, and the menu reads that way: butterflied lobster with orange pulp, olive oil and a basil emulsion; a truffle dome over warm artichoke and baby-spinach salad; pan-fried foie gras with artichoke cream; and, at the luxurious end, frozen garden citrus with Kristal caviar.
What makes it individual is the place itself: cooking of this refinement in a centuries-old olive grove above the town that scents the world, on a property the chef has tended for nearly three decades. It is an elegant, relaxed country-house register rather than a formal city dining room, and it doubles as a small hotel for those who want to stay in the hills.
It runs broadly year-round, with an annual closure in November and reduced days in the low season, moving toward daily service from around May. A reservation is essential, and the drive up from Cannes is part of the experience.
