Ruya is the modern Anatolian restaurant inside the Carlton Cannes at 58 Boulevard de la Croisette. The name means dream in Turkish, and the cooking draws on the Anatolian Peninsula from the Mediterranean to the Black Sea: Anatolian classics given a fresh, modern treatment, with seasonal dishes built for sharing.
Evenings start with Mekan Sunset from 6 to 7 p.m., when the bar sets out meze with Anatolian wines and Turkish-inspired cocktails scented with cardamom, rose, pomegranate, honey and citrus. Dinner follows from 7 to 10:30 p.m. Proper attire is required, and entry may be refused without it.
The larger plates come out of a charcoal oven. Kaburga, a Black Angus rib of beef cooked for 24 hours with chickpea puree and a house barbecue sauce, anchors the menu, alongside grilled lamb cutlets with smoked eggplant and minted yogurt, whole baked sea bass, and a whole grilled lobster with fresh eriste pasta. Before that come hummus with lavash, yellowfin tuna tartare with bulgur, crispy baby squid and pides from the bread oven, including one with slow-cooked short rib.
Two tasting menus, Anatolian and Marmara, take the whole table through the kitchen for a minimum of two guests. Firin sutlac, the baked Anatolian rice pudding with raspberries, rose ice cream and lokum, closes it out.
