Handmade pasta from chef Sarah Grueneberg at a West Loop restaurant and pastificio
Monteverde is chef and co-owner Sarah Grueneberg's restaurant and pastificio in Chicago's West Loop, opened in November 2015 and listed in the Michelin Guide. The cooking pairs a traditional heart with a modern hand, mixing Italian tradition with flavors from Grueneberg's travels and her family heritage. Bailey Sullivan, who worked her way up through the kitchen, has been executive chef since February 2025.
Elevated behind the bar is the custom-built pastificio, where the team mixes and rolls dough, runs shapes through the extruder and fills delicate pastas throughout the day, all in full view of the dining counter. On the current menu, the Cacio Whey Pepe tosses fusilloni with pecorino, lemon ricotta whey and a four-peppercorn blend, and the Gnocchetti con Pesto comes with housemade lemon ricotta and Tuscan pine nuts. The Fusilli con Ragu alla Napoletana carries a braised pork neck bone sauce with Italian sausage polpettine.
The filled pastas currently include sheep's milk ricotta tortelli and chanterelle tortellacci, and the large shared plates run to a whole-bird chicken parm. A batteria of wood barrels ages traditional balsamic vinegar for the restaurant, and the wine list is Italian-focused.
Monteverde opens at 11 AM Tuesday through Saturday, serving until 10 PM Tuesday through Thursday and until 10:30 PM on Friday and Saturday, with an aperitivo hour from 2:30 PM to 4:30 PM. It is closed Sunday and Monday.
