Michelin-starred tasting menu with beer pairings, inside a working South Loop brewery
The Dining Room at Moody Tongue is an intimate 28-seat fine-dining restaurant inside the brewery's South Loop home, and it holds one Michelin star. Executive Chef James Bingham cooks a hyper-seasonal tasting menu of more than ten courses, paired with beers from brewmaster Jared Rouben that are brewed on site.
The current menu opens with kampachi with avocado, watermelon and daidai, then scallop with papaya and red miso, crab ravioli in brown butter, and barramundi with a summer squash jeow som. A bread and cheese course of pretzel, mimolette and pepper jam leads into pork belly with caviar, potato and fennel, then Margaret River wagyu with cornbread, huitlacoche and chanterelles. Heirloom tomato with granola and cocoa and a berry dessert with rhubarb, shortbread and yuzu close the meal, and dishes change with the seasons.
The beer pairing comes in three tiers, Classic, Reserve and Grand Reserve, and reserve wines and cocktails are poured too. The room is polished and warm with a minimalist feel. There is no dress code, though most guests dress in cocktail or business attire, and the meal typically runs two to two and a half hours.
Seatings are at 6:30 PM on Wednesday and Thursday and at 6 PM and 8:30 PM on Friday and Saturday, and the room is closed Sunday through Tuesday. Reservations open 42 days ahead and must be made at least 24 hours before the seating.
