Can Domingo occupies an old stone finca in the hills along the road from Ibiza town toward San Jose, set back among fields and olive trees. Three friends from Italy opened it in 2012, and it has kept the feel of a private country house ever since.
The food is honest, homemade Italian, built on produce grown a few steps away. The restaurant tends its own organic permaculture garden and fills in from local farmers, so the menu leans on what is ripe rather than what is fashionable.
Chef Beppe's kitchen turns out egg-yolk tagliolini with truffle, ravioli del plin, risotto with baby courgettes, braised beef cheek and a Torinese breaded veal that regulars come back for. Cocktails are mixed at a stone bar built around a centuries-old olive tree.
Tables are scattered through the garden rather than lined up in rows, which keeps an evening here unhurried and a little secret. Can Domingo runs through the Ibiza season, and dusk, once the garden lights come on, is when it is at its best.
