Rafa Zafra's seafood and caviar restaurant on Cala Jondal, on Ibiza's south coast
Casa Jondal sits on Cala Jondal, a cove on the south coast of Ibiza near Sant Josep. It is the Ibiza kitchen of Rafa Zafra, the Seville-born chef who came up through the elBulli family before opening the Estimar seafood restaurants in Barcelona and Madrid.
The menu is laid out by product and technique, and seafood leads. Oysters come raw, scallops cured or grilled, mussels grilled with bay leaves and cayenne, and red prawns either as an elBulli tribute carpaccio or grilled whole in XXL size. Lobster, spiny lobster and whole fish go on the grill with bilbaina sauce and are sold by weight, while Wagyu tartar, a 500g Wagyu rib eye and dry-aged Rubia Gallega cover the meat side.
Caviar has a section of its own. It runs from caviar on grilled toast with butter to seven egg yolks with caviar, red prawns and cured pork belly, the smoked salmon and caviar Bikini, a Trikini that adds lobster, Jondal's pasta with caviar and a 100g tin of Amur Beluga served with its garnish.
