Es Xarcu takes some finding, which is the point. You leave the San Jose road near Es Cubells and Porroig and drop down a final stretch of dirt track to a tiny virgin cove, where the restaurant sits right at the water with a handful of tables facing the sea.
The Torres family has run it for more than forty years, and the formula has barely changed: the freshest whole fish from Ibiza's own waters, cooked simply. Rotja, dentex, grouper and sea bass come baked in the oven or under a salt crust, and the red prawns, grilled or done in garlic, are what many people drive out here for.
Alongside the fish there are clams, oysters and hand-cut ham, and little else needs to be. The cooking trusts the raw ingredient and gets out of its way.
It is a warm-season spot, open roughly from Easter into October, and you can arrive two ways: down the track by car, or by boat, dropping anchor in the cove in front of the tables.
