Roto sits on a platform built out over the water at Marina Ibiza, its terrace stretching above the sea and looking straight across to Ibiza Town and the walls of Dalt Vila. The house line is "This Kitchen is for Dancing".
The menu works two sides of a line. The Mediterranean side is produce-led: Gillardeau oysters, 100% acorn-fed Iberian ham, Iberian ham and red prawn croquettes, an Ibizan tomato salad, a boletus and truffle risotto and a whole sea bass cooked over charcoal. The other side travels east, with tiger prawn tempura in Korean chili sauce, black cod in a miso marinade, a smoked Thai yellow curry and a full list of sushi rolls, nigiri and sashimi.
For a table that wants to go big, there is a ribeye aged 45 days, a one-kilo Chateaubriand finished over charcoal and a veal Milanese made for sharing. A cocktail list and a Champagne and wine list keep the table going after the plates are cleared.
Come early for the light over the old town and the yachts in the marina, or book later and stay on as the evening turns toward dancing.
