This is not a meal you attend so much as a performance you eat your way through. Sublimotion is widely reported as the most expensive dining experience on earth, and once you understand what it is, the number starts to make its own strange sense.
The mind behind it is Paco Roncero, the double-Michelin-starred chef who treats the plate as one instrument among many. Across roughly twenty courses, a team of around twenty-five people, chefs, illusionists and performers among them, choreographs a single three-hour show for a room of just twelve guests, one seating a night.
It all happens inside a purpose-built capsule where 360-degree projections, lasers and virtual reality dissolve the walls, so a single course might arrive as the room becomes a night sky or an entirely other world. The technology is not a garnish here; it is half the point.
You will find it on Playa d'en Bossa, housed within the Hard Rock Hotel complex and a short stroll from the new BLESS Ibiza The Site. Molecular technique, wine and champagne arrive in lockstep with the theatrics rather than as an afterthought.
The window is narrow. Sublimotion runs only through the core of summer, roughly June to September, and with a dozen seats a night the calendar disappears fast. This is a book-well-ahead proposition, not a walk-in.
