Paco Roncero's immersive dinner show inside BLESS Ibiza The Site on Playa d'en Bossa
Sublimotion is dinner staged as a show. Enveloping projections, visual effects and music surround a small group of diners, and each session is choreographed around them, so the dishes arrive as part of the performance. The technology is not a garnish here; it is half the point.
The mind behind it is Paco Roncero, whose restaurant in Madrid holds two Michelin stars in the 2026 Guide, and who treats the plate as one instrument among many. He created the concept with creative director Eduardo Gonzales, and the team behind the show has included illusionist Jorge Blass and musical director Lucas Vidal alongside chefs such as Elena Arzak, Dani Garcia and Ana Ros.
You will find it on Playa d'en Bossa, inside BLESS Ibiza The Site, the beachfront hotel that opened in June 2026 on the site of the former Hard Rock Hotel Ibiza.
