Don's Prime is the steakhouse at Fontainebleau Las Vegas, the resort that opened in December 2023, more than sixteen years after construction began. The restaurant is a tribute to the late father of Fontainebleau Development chairman and CEO Jeffrey Soffer, and it runs as a classic American steakhouse: an intimate dining room, prime cuts, seafood plateaus and an extensive global wine list.
The beef is USDA Prime from Pat LaFrieda, including a dry-aged bone-in ribeye, a dry-aged porterhouse, a dry-aged bone-in New York strip and the 48-ounce Don's Tomahawk. Wagyu comes from Cross Creek Ranch, a Don's Prime exclusive, and Snake River Farms, and A5 Japanese wagyu is served with Okinawan sweet potato. Starters include filet mignon carpaccio with black truffle pecorino, wild jumbo shrimp cocktail and an iceberg wedge, and Kolikof golden osetra caviar comes with warm blinis.
The sole meuniere is prepared tableside, and Don's Signature Surf and Turf pairs a filet with Maine lobster tail. Dinner is served daily from 5 to 10 p.m., dress is business casual and diners must be at least 5. The private dining room seats up to 20. LIV Nightclub and LIV Beach are on the same property.
