Two-Michelin-star French dining room at MGM Grand, built around a 15-course degustation and tableside carts
Joel Robuchon opened at MGM Grand in 2005, earned three Michelin stars in 2008, and in 2026 was the only restaurant in the inaugural Michelin Guide Southwest to receive two stars. The dining room is designed to feel like an Art Deco townhouse, with marble floors and a garden terrace, and the kitchen is led by executive chef Eleazar Villanueva, a 2025 James Beard finalist for Best Chef: Southwest.
Most first visits center on the 15-course degustation, a run of small duos and trios that opens with Le Caviar Imperial: crab in crustacean gelee with cauliflower cream and osetra caviar. Le Crab Royal, a farm egg filled with king crab and caviar, is another signature. The carts carry much of the evening. Le Gall butter from Brittany is carved at the table, around 15 breads baked in house follow on their own trolley, and later come a seasonal cheese cart, a fresh-herb tea service and a cart of bite-sized pastries.
The cellar holds more than 1,800 selections, focused on Champagne, Burgundy and Bordeaux, and the degustation can be paired at three levels: Village, Premier Cru and Grand Cru. Dinner runs Tuesday through Saturday from 5 p.m. to 9:30 p.m., and the dress code is business formal. Guests leave with a personalized menu and a seasonal cake to take home.
