Komodo at Fontainebleau is the Las Vegas location of the Miami restaurant from Brickell, and it opened with Fontainebleau Las Vegas in December 2023 as the third Komodo after Miami and Dallas. It brings the same idea to the north end of the Strip: Southeast Asian plates meant for sharing, house cocktails, and a DJ in the room every night from around 7 p.m.
The menu moves across Asia rather than sticking to one country. Peking Duck comes with pancakes, cucumber, scallion and hoisin. Otoro tartare is topped with osetra caviar, and Lobster Dynamite arrives with sriracha and crispy rice. The dim sum includes gold-leaf Money Bags, and the mains run from Chilean sea bass in saikyo miso to Tom Kha halibut and Alaskan king crab lo mein. For steak, there is an A5 Miyazaki New York strip and a 36-ounce Kagoshima tomahawk. A separate sushi menu covers nigiri, sashimi and an omakase platter.
It is a loud, social room, and it works best as the start of a longer night. LIV Nightclub, BleauLive Theater, Mother Wolf and Papi Steak are all in the same resort, so the rest of the evening rarely needs a car. For a big group, Komodo can reserve its main dining room, or the entire venue for events of up to 326 guests.
