Mother Wolf at Fontainebleau Las Vegas is chef Evan Funke's homage to the cooking of Rome, the Las Vegas outpost of his Hollywood original. It opened in December 2023 alongside Fontainebleau itself, with a menu of wafer-thin wood-fired pizzas, seasonal antipasti and the pastas Funke is known for.
Pasta is the center of the table. The current menu includes tonnarelli cacio e pepe, rigatoni alla carbonara and all'amatriciana, spaghetti all'arrabbiata, linguine alle vongole and gnocchi di ricotta. Start with the sfincione, Funke's signature focaccia, then squash blossoms with ricotta romana, calamari fritti or crispy short rib meatballs.
Secondi include scottadito di agnello, a whole grilled Mediterranean sea bass and a 32-ounce, 60-day dry-aged prime bone-in ribeye. The wine list by the glass is mostly Italian, from Piemonte and Tuscany to Etna, with Champagne and a few Napa Valley bottles. Dinner starts at 5 p.m. Sunday through Thursday and at 4 p.m. on Friday and Saturday.
