The Mayfair Supper Club opened at Bellagio on New Year's Eve 2019 in the lake-facing space that previously held Hyde, and the room is set against the Fountains of Bellagio. Dinner is staged as a show, with performers moving between the tables and through the room across the meal. The resort encourages guests to be over 12 because of the mature themes.
The menu leans on supper club classics: Dover sole Veronique with brown butter, grapes and capers, General K's hot and sour lobster, garlic-crusted prime rib with fresh horseradish and steamed king crab legs. Caviar service comes with creme fraiche and traditional garnish, and the raw side runs from seafood towers to a wagyu beef and caviar hand roll and the Mayfair roll of spicy tuna, hamachi and shrimp tempura.
The lounge opens at 5pm and dinner is served from 5:30pm, until 10pm Sunday through Thursday and 11pm on Friday and Saturday. The Fountains Experience seats a limited number of guests on an outdoor patio facing the fountains, groups of 8 to 20 can book a set menu, and the lounge takes parties of 20 or more. Dress is business casual or upscale, and Petrossian Bar on the same property makes the natural nightcap.
