Spago Beverly Hills is Wolfgang Puck's flagship. The original Spago opened on the Sunset Strip in 1982, and the restaurant on Canon Drive has been open since 1997. Executive Chef Areg Avanessian leads a kitchen built around the freshest local ingredients, with a menu shaped by the season and the best of California's markets, served a la carte or as a full tasting menu.
The room, designed by Waldo Fernandez, is sleek and simple, and seats in the main dining room look onto the open kitchen and a floor-to-ceiling wine wall. The patio is the seat to ask for: a brick-floored courtyard with bougainvillea, a retractable roof and fireplaces at either end.
The menu moves with the markets. Recent dishes include Agnolotti del Plin with Brentwood white corn, mascarpone and sage, a Prosciutto San Daniele pizza, a caviar cannoli with applewood smoked salmon, and a 36-ounce Snake River Farms wagyu cote de boeuf. The nine-course A California Story tasting menu comes with an optional sommelier pairing. For dessert, the Kaiserschmarrn, an Austrian torn pancake, arrives with Gaviota strawberries and raspberry stracciatella.
The wine list has held a Wine Spectator Grand Award every year since 2010, with 2,700 selections and 15,500 bottles. Dinner runs Tuesday through Sunday, and the bar stays open until midnight on Fridays and Saturdays.
