Spago by Wolfgang Puck · Restaurant · Las Vegas
Wolfgang Puck's Las Vegas flagship, on Bellagio's lake level with a terrace facing the Fountains
Spago arrived in Las Vegas in 1992, in the Forum Shops at Caesars Palace, and stayed there twenty-five years before Wolfgang Puck moved it across the Strip. It reopened at Bellagio in the spring of 2018 on the lake level, in the space Olives had held, and the room was built around the view: floor-to-ceiling windows and a terrace that sits directly in front of the Fountains.
The cooking is Californian and led by the market. Menus shift with the chef's weekly trips to the Santa Monica Farmers Market, and the fixtures are handmade pasta, wood-oven pizza, seafood and prime steaks. Baja kanpachi crudo arrives cold and bright. Garganelli is tossed with rabbit confit, and black bass is set against a sweet pea puree. The grilled prime for two is the dish to order when the table wants a centerpiece. The wine list is long and the cocktails are taken seriously.
Brunch runs Friday through Sunday, 11:00 AM to 2:30 PM, the quieter half of the day on the terrace. Dinner is served nightly, 4:30 PM to 10:00 PM. Tables on the fountain side are limited and go first, so they are worth asking for when you book.
Address: 3600 S Las Vegas Blvd, Las Vegas, NV 89109, Las Vegas
