Entremar is Gabriela Camara's Polanco seafood house, run by the Contramar team and carrying essentially the same menu as its famous Roma sibling. It is the quieter address of the two, which is exactly the appeal: the same cooking, shorter waits, and a Polanco location that suits a business lunch better than the scrum on Durango.
The kitchen works the Mexican Pacific playbook. Tuna tostadas, finished with chipotle sauce, avocado and fried leek, are the signature and arrive first at most tables. The pescado a la talla, a whole fish butterflied and grilled with red chile on one side and green herb salsa on the other, is the dish to order for the table, served with fresh tortillas. Around that sit aguachiles, ceviches, tostadas and whatever came in that morning, plus a fig tart that regulars order before they sit down.
The room feels more like a coastal dining room than a Polanco power spot, even when it is full of them. Service is efficient and unfussy, and tables turn quickly through the midday rush.
