Two Michelin stars, garden-driven Mexican
Quintonil is the Polanco restaurant of chef Jorge Vallejo and his partner Alejandra Flores, open since 2012 and holder of two Michelin stars in the Mexico guide alongside a long run near the top of Latin America's 50 Best. The name is a wild amaranth green, which tells you where the cooking sits: Mexican produce handled with restraint and a great deal of technique.
The format is a multi course tasting menu with a shorter carte alongside it, rewritten around what the kitchen garden and a network of small growers send in. Long running signatures include the charred avocado tartare with escamoles and a cactus sorbet that closes the meal. The wine and mezcal program leans hard into Mexican producers and the sommelier team is one of the strongest in the country.
The dining room seats about 42 and is deliberately plain: pale walls, linen, a view onto the garden, no theater. It is the quietest of the city's top tables and the easiest one to hold a conversation in, which is part of why it draws so much repeat business from the Polanco crowd.
