Mediterranean fire and sea on Masaryk
Taboo Polanco is Grupo RosaNegra's Mediterranean supper club on Avenida Masaryk, the sibling of Taboo rooms in Tulum, Los Cabos and Isla Mujeres. It is designed as a restaurant that becomes a night: dinner service sliding into music, performances and a room still full at 1am.
The kitchen answers to Greek chef Athinagoras Kostakos, winner of Top Chef Greece, and his brief is sea and fire. Carpaccios, charcoal octopus, salt-baked fish flambeed at the table, wagyu tuna with caviar and oysters anchor the raw and grilled sections, while the pasta list runs from the much-copied orzo with shrimp to seafood spaghetti and a deconstructed pastitsio. Everything is made in house and plated for sharing.
The design is a deliberate collision of cultures: limestone walls that nod to Greek island archite
