La Vague d'Or is the restaurant of Cheval Blanc St-Tropez, on the Plage de la Bouillabaisse at the entrance to the village, and it holds three Michelin stars in the 2026 Guide. Gault and Millau rates it 19/20 with five toques. Its terrace looks out across the bay of Saint-Tropez.
At the helm is Arnaud Donckele. His cooking is a journey through the Mediterranean and the traditions of Provence, and his signature is sauce work described as ephemeral and velvety, delicate yet deeply built. He starts from a close study of local fish, species by species, and his ever-changing menus lean on red mullet, shellfish and Provencal produce.
Dinner is served as a set of curated menus. Run Away Together celebrates timeless classics, while Epicurean Adventure is built for the most gourmand appetites, and both change with the seasons. The front of house works as a choreographed team around the chef, so a meal unfolds course by course across the evening.
La Vague d'Or opens for dinner only during the summer season, every evening from 7:30pm to 9:30pm except Wednesday. For tables of five or more, the kitchen suggests a single personalized menu for the whole party.
