In a town that reinvents itself every season, Le Girelier is a fixed point. Generations of Tropeziens and returning summer regulars come back to it as the address for classic Provencal seafood done properly, without gimmicks and without fuss, year after year.
The setting is bright and unmistakably nautical. A shaded terrace of comfortable leather chairs sits behind a glass frontage that opens straight onto the marina, and the sand-and-white palette is meant to feel like the deck of a yacht - you sit facing the boats and the shifting light on the harbour.
The signature is bouillabaisse, the emblem of the house and one of the dishes that made the Girelier's name. It is built on noble fish - loup, Saint-Pierre and sea bream - in a saffron-scented broth, and served the traditional way, with croutons and a proper rouille brought to the table.
Around it, the plateau de fruits de mer is the other reason regulars return, arriving piled high with the day's shellfish over crushed ice - oysters, langoustines, clams and whatever the boats have landed that morning. The kitchen keeps to the essentials and executes them cleanly, letting the quality of the catch carry the plate.
The rest of the carte reads like a Mediterranean seafood primer - paella royale, fish carpaccio, grilled lobster, sole and turbot, much of it cooked simply a la plancha so the product speaks for itself. Service runs continuously, from midday through the afternoon and late into the night, seven days a week in season.
Little about the formula has changed in decades, and that is the point. You take a table on the terrace, order the bouillabaisse or the platter, and let the ballet of the port do the rest as the day slides toward evening.
