Salama sits inside the historic Villa Romana, a few steps from the Place des Lices, and has served Moroccan-Mediterranean cooking there since 1999. Founders Frederique and Fabrice built the concept around an exotic garden entrance and Marrakech-crafted interiors, where a lush terrace gives onto a layered dining room that blends traditional Moroccan architecture with Saint-Tropez polish.
The kitchen leans on fresh ingredients and house-made breads. Signature plates include a Chicken Pastilla with cinnamon almonds, a Royal Couscous of beef, chicken, lamb, and merguez, and a Lamb Shank Mourouzia built on ras el hanout. Grilled Octopus and a Roasted Cod Fillet anchor the Mediterranean side.
