Spotted Stone · Rooftop Bar · Tokyo

The gin-led bar and lounge on the 38th floor of 1 Hotel Tokyo in Akasaka, with more than 100 Japanese gins.
Spotted Stone is the gin-led bar and lounge of 1 Hotel Tokyo, on the hotel's 38th floor in Akasaka. The hotel opened in 2026 as the brand's debut in Asia, and the bar is built around Japanese craft gin, with a collection of more than 100 bottles that puts local distillers first.
It is an intimate, low-lit indoor room with sweeping city views through the glass. A martini cart works the floor: guests pick the gin, from the Ki No Bi range out of Kyoto to Monkey 47, then a vermouth such as a Japanese sake vermouth, and a house tincture of shiso, yuzu peel, reishi or kombu.
The signature list, History Through Juniper, reworks classics with Japanese gins: Shiso Blossom Fizz on a French 75, Yuzu Revival on a Corpse Reviver No. 2, and Count Koji, a Negroni built on Iki Shima strawberry gin and koji Campari. The bar runs on zero-waste lines, turning citrus peels into its own pseudo lemon and lime and infusing spent coffee into the rum for its espresso martini. Snacks run from Akasaka Kakiyama rice crackers to a pork loin katsu sandwich and a sirloin burger.
Spotted Stone opens daily at 14:00, closing at midnight Sunday to Thursday and at 1:00 on Fridays, Saturdays and holidays. Resident DJs play from 18:30 to midnight Thursday to Saturday, and guest bartenders from other bars take over for one-night Bar Shift events.
