Aksorn is chef David Thompson's one-Michelin-star ode to mid-twentieth-century Thai cooking, set on the fifth floor of Central: The Original Store - the very first Central department store - on Charoenkrung Road in Bang Rak. Thompson, the chef who first won a Michelin star for Thai cuisine at Nahm, treats the restaurant as a living archive of dishes that had all but vanished.
He builds the menu from a vast personal collection of vintage Thai cookbooks and culinary magazines, resurrecting recipes with scholarly care. The cooking is richly flavored and rebuilt with rigor, not nostalgia alone - Thai food as it was, made to stand up today.
The prix-fixe menu is served samrub or sharing-style, exactly as Thai food is traditionally meant to be eaten. A rooftop bar upstairs rounds off the night. For diners fascinated by the deep history of Thai food, few tables reward the curiosity as generously.
