Aksorn is chef David Thompson's one-Michelin-star ode to mid-twentieth-century Thai cooking, set on the fifth floor of Central: The Original Store - the very first Central department store - on Charoenkrung Road in Bang Rak. Thompson, the chef who first won a Michelin star for Thai cuisine at Nahm, treats the restaurant as a living archive of dishes that had all but vanished.
He builds the menu from a vast personal collection of vintage Thai cookbooks and culinary magazines, including memorial cookbooks handed out at prominent funerals, resurrecting recipes with scholarly care. The cooking is richly flavored and rebuilt with rigor rather than nostalgia alone - Thai food as it was, made to stand up today.
