Bo.lan was founded in 2008 by the husband-and-wife chefs Duangporn 'Bo' Songvisava and Dylan Jones, who blended their names into the restaurant's own. It won its first Michelin star in the inaugural 2018 Bangkok guide, returned to the star list in 2026, and sits at number 98 on Asia's 50 Best Restaurants 2025 - a landmark of the modern Bangkok dining scene.
Beyond the accolades, it is one of the city's most committed sustainable restaurants, built around near-zero-carbon ambitions, organic sourcing and slow-food principles; Bo's work was profiled in the fifth season of Chef's Table. The Sukhumvit setting is relaxed and unshowy, the focus kept squarely on the cooking and its conscience.
The food itself is fiercely traditional. The kitchen champions time-honored Thai technique and can layer more than twenty ingredients into a single dish to reach the authentic balance of spicy, sweet, sour and salty that defines proper Thai food. The menu changes constantly, following the seasons and the produce of small local farms.
For diners who want deeply traditional Thai cooking done with real conviction and care for its sourcing, there is nothing quite like it. Book ahead, come with an appetite for bold, layered flavor, and let the seasonal menu lead.
