Ginza Sushi Ichi brings its Tokyo Ginza lineage to Gaysorn Centre on Ploenchit Road, and it was among the earliest omakase counters in Bangkok to earn a Michelin star, awarded in 2018 and again in 2019. It does not currently hold a star, but remains a reference point for traditional Edomae sushi in a city that now has many contenders.
The room is compact and hushed, finished in Japanese wood with neutral pine walls, and seats only ten guests around the marble counter, all angled toward the sushi preparation area. The effect is calm and focused, a deliberate stripping-away of distraction so the attention falls entirely on the counter and the chef's hands.
The kitchen flies its fish straight from Tokyo's market, and whatever day you dine, the seafood will have been at market less than 24 hours before it reaches you. Lunch and dinner omakase menus both follow classic Edomae style, moving through nigiri built to exacting, traditional Tokyo standards.
This is a purist's counter, best approached with patience and an open hand - let the chef lead, and go for dinner if you want the full progression. It sits inside Gaysorn Centre on Ploenchit Road, and its few seats mean booking ahead is essential.
