Once Michelin-starred modern Thai restaurant on the 3rd floor of Gaysorn Village
Paste is a modern Thai restaurant that opened in 2015 in Gaysorn Village on Ploenchit, and it once held a Michelin star, first awarded in 2018 and held until the 2024 Guide. It is the work of chefs Bongkoch 'Bee' Satongun and Jason Bailey, who describe their approach as heirloom creative Thai - in Bee's own framing, roughly eighty percent tradition and twenty percent innovation.
The setting is polished and elegant, tucked into the upmarket Ploenchit shopping district, with Bailey overseeing a dining room that matches the kitchen's precision. It feels refined without tipping into formality, a calm counterpoint to the streets below.
The cooking is where Paste earns its reputation. Before opening, Bee spent years researching the history of Thai cuisine, re-creating ancient recipes and long-forgotten techniques from regional cooking and royal-family cookbooks - many dishes trace back to the period around 1870 to 1930 - then executing them with contemporary finesse and produce sourced directly from local growers.
The result is one of the city's most refined expressions of elevated Thai dining. Go for the tasting menu to see the full range, book ahead for dinner, and expect a smart-casual room.
