Resonance holds one Michelin star for what chef Shunsuke Shimomura calls 'Boundless Cuisine
Resonance holds one Michelin star for what chef Shunsuke Shimomura calls "Boundless Cuisine" - a border-crossing tasting menu that filters his Japanese roots through French technique and Thai produce. The tidy label of a Thai-French bridge undersells it: this is genuinely global cooking, grounded in classical craft.
It sits on the ground floor of a contemporary two-story house off Sukhumvit 65, near Ekkamai. The look is minimalist and calm, but the service is generous, with a large team working a deliberately small room - the kind of ratio that lets the kitchen chase precision.
Shimomura's resume runs through kitchens in Copenhagen, Italy, France and Australia, plus a stint as research-and-development chef at Gaggan, and that range shows on the plate. The wine list leans hard into Burgundy, while the drinks pairing is imaginatively built, roaming into beer and sake where it makes sense.
For diners who want a starred room with a real point of view instead of a museum piece, Resonance is one of the city's most rewarding tables. It is a tasting-menu evening; reserve ahead, and consider the pairing to see the kitchen's range in full.
