Saawaan - the word means 'heaven' in Thai - is chef Sujira 'Aom' Pongmorn's modern Thai restaurant in the Suan Phlu lanes of Sathorn. It held a Michelin star from 2019 to 2022, and since opening in 2018 it has become one of the city's defining new-Thai tables, and Chef Aom one of the most celebrated women cooking in Bangkok.
The room is calm and contemporary, an understated setting that keeps the focus squarely on the plate. It is built for the tasting-menu format, an intimate stage for a kitchen working through a long, considered progression.
That menu is the concept: a seasonal tasting organized around the techniques of traditional Thai cooking, each course standing for a method - raw, then a dip, something fermented, a dish over charcoal, a curry, and on through steaming and grilling. Aom, who trained through the Mandarin Oriental's apprenticeship program and started her career at Lord Jim's, draws on childhood street-food and fermentation memories to reframe those techniques instead of simply reproducing them.
The result is thoughtful, produce-driven fine dining that rewards an unhurried evening. It is a set-menu-only room, so come with time to spare; reserve well ahead, as the small dining room books out.
