Signature holds one Michelin star on the 11th floor of the VIE Hotel Bangkok
Signature holds one Michelin star on the 11th floor of the VIE Hotel Bangkok, an MGallery property on Phayathai Road in Ratchathewi. It is the work of chef Thierry Drapeau, who earned two Michelin stars in France before bringing his distinctive 'floral cuisine' to the city.
The dining room is styled in art-deco lines, with floor-to-ceiling windows and velvet curtains that draw back to reveal the chef's stage: an open kitchen where the team plates each course in view. It is a refined, theatrical space built around watching the cooking happen.
Drapeau's kitchen runs on five-course and eight-course tasting menus that shift with the seasons. The signature is his use of delicate edible flowers, herbs and pristine produce from land and sea, classic French technique lifted with a floral, botanical delicacy.
The result is a special-occasion room pitched at guests who want fine-dining polish without the marquee crowds of the river towers. Reserve the full tasting for the complete arc of the menu, and go with an appetite for a long, considered evening.
