Craft is Grupo Rosa Negra's open-fire kitchen on the rooftop of ME Cabo, the adults-only Melia hotel on Medano Beach, with El Arco and the Sea of Cortez laid out beyond the terrace. The idea is fire, flavor and craft: almost everything touches flame or smoke.
Cooking happens over a Josper grill, a wood-fired hearth and a wood dome for smoking. Prime cuts come off the coals with a hard char and a resting shine, and the sea is handled just as seriously, from wood-fired lobster to octopus with salsa macha and a whole catch of the day baked in a salt crust and cracked open tableside.
