A fashion grillhouse where dinner turns into a show
Chambao Los Cabos wears the label 'fashion grillhouse' with intent: an elevated steakhouse and fresh seafood room set in a blend of art, fashion and entertainment. It sits on Paseo Malecon in the San Jose del Cabo hotel zone, very close to several of the hotel zone's resorts.
The kitchen centers on premium beef, with aged Creekstone Farms cuts, Australian Wagyu and Kobe alongside fresh seafood. House specialties include the 'Lucifer' and the 'Mamut', and a slow-cooked short rib.
The design is bohemian and elegant, built from rustic and artisanal elements, with monumental art at its heart: 'True Nature', a large-scale Daniel Popper sculpture, is the centerpiece. Entertainment is core to the concept, not an afterthought. Shows such as Aqua Inferno Reflections, where fire meets water, and the Aerial Tribal Ceremony, with artists spinning suspended by their hair, share the night with a Spanish guitarist, fashion shows and a resident DJ carrying the room later into the night.
