Farm-to-table restaurant and cocktail bar at Acre Resort in Animas Bajas, San Jose del Cabo
Acre is an open-air restaurant and cocktail bar set inside Acre Resort, a jungle property of villas, haciendas and treehouses tucked into the palm groves and rolling hills of Animas Bajas near San Jose del Cabo. The walk in, along a path flanked by towering palms and up a grand staircase, sets the tone for the evening.
At the heart of the resort is a working farm that grows more than 60 organic crops, from mango and citrus trees to rows of tomatoes, peppers, root vegetables and herbs, with meat and seafood arriving daily from nearby suppliers. Chef David Fajardo's kitchen calls its menu globally inspired, locally sourced and seasonally served, and the Michelin Guide describes contemporary Mexican cooking with Asian touches.
That farm-driven approach has earned Acre a place in the Michelin Guide and a MICHELIN Green Star for its sustainability work. The cocktail bar is a destination in its own right, with drinks built on fresh rosemary, hibiscus, dried citrus and guava leaf, and it comes alive with music after dark. Colibri Cantina, the intimate tasting bar within the restaurant, pours La Tierra de Acre mezcal for a nightcap.
Lunch is served under the palms on weekdays, and Saturday and Sunday bring a five-course brunch with mimosas, bellinis and mezcalitas. Tuesday is taco night and Wednesday is ribs night. Acre holds a table for 15 minutes past the reserved time.
