Cayao is the oceanfront dinner restaurant of the Four Seasons Resort Cabo del Sol on the Tourist Corridor, with Richard Sandoval as consulting chef and Gino Davila running the kitchen. It opened in 2024 with the resort, and it takes its name from Callao, the Peruvian port where Japanese families arrived in 1899.
The cooking is Nikkei, the meeting of Japanese and Peruvian kitchens. The restaurant points to three dishes first: the Cayao ceviche of shrimp, octopus and scallop with a house-made sriracha, a lobster roll with ponzu aioli and avocado, and short rib rice, a chaufa with shiitake and shimeji mushrooms, truffled yakiniku and crispy shallots. Cayao fried chicken comes karaage-style with truffle crème fraîche and caviar, and the Cayao Tokusen is the chef's daily selection of nigiri, sashimi, ceviche and maki. The bar's pisco sour is made with Pisco Quebranta.
The dining room sits under a timber ceiling and opens onto a terrace at the edge of the water, with a sushi counter hung with red lanterns at one end. A private dining room seats up to 16 with views of the ocean, and a tableside martini cart works the room.
Dinner is served Tuesday to Sunday from 5 p.m. to 10:30 p.m. Tables are open to diners who are not staying at the resort.
