Al Pairo is the Michelin-recommended restaurant at Solaz, a Luxury Collection Resort, set on the Cabo Real corridor between Cabo San Lucas and San Jose del Cabo. Designed by Sordo Madaleno, the resort steps down toward the Sea of Cortez in cascading terraces, with original works by Mexican artist Cesar Negrete throughout.
That setting carries into the dining room, which reaches well past the usual bar for hotel dining. The resort describes the cooking as contemporary Mexican cuisine rooted in pre-Hispanic tradition, with corn at its heart, native ingredients and ancestral techniques. The Michelin Guide singles out its focus on Baja ingredients and locally caught seafood.
Alongside the mainstays, the chefs run spontaneous menus that change daily with the season. A few dishes show the range. A bluefin tuna tostada arrives with fried pork belly, fresh avocado, grasshopper aioli and salsa macha. The house mole comes with New York wagyu, roasted plantain puree and roasted onions, and octopus is cooked in chilmole with cactus salad and chorizo.
La Cava, the cellar that complements the dining room, holds more than 200 labels from 80 wine regions across 13 countries, and it rewards a slow, wine-led dinner. Al Pairo serves dinner nightly from 5:30 PM to 10:30 PM, and the dress code is smart casual.
