Amante is the agave speakeasy hidden inside Rosa Negra Cabo in Cabo del Sol, a dark, candlelit room built for the part of the night that comes after dinner. It opened in November 2025, with rustic wood, soft warm light and a discreet design. The heart of it is the agave library, more than a hundred bottles deep, tequila and mezcal alongside the harder-to-find spirits: bacanora, sotol, raicilla and pox.
The cocktails are inspired by classic boleros and named for them: Besame Mucho with Aperol, lychee and rose liqueur, Sabor a Mi built on sotol liqueur, and Historia de un Amor with pulque and red wine. The mood is intimate and slow, with a DJ setting the rhythm, the kind of room you settle into for one more drink. It doubles as a private-event space when a group takes it over.
