Arbol holds a distinction in Los Cabos: it was the first Asian restaurant to open in the region, and it still reads as something apart from the resort-town norm. Set within Rosewood Las Ventanas al Paraiso in San Jose del Cabo, the room pairs coastal cooking with Asian and Indian influences, sunken tables angled toward the ocean, and a quiet, intimate register.
Head chef Anand Singh brings a well-traveled hand to the kitchen, with experience spanning India, the Maldives, the UAE, and the Seychelles. That range shows up on the plate: fresh Baja seafood alongside curries, sushi and sashimi, wagyu, and dishes finished in the tandoor or the wok.
A raw bar anchors the lighter side of the menu, with Baja oysters and shellfish platters meant for slow grazing before the sun drops. It is the kind of opening act that suits the setting. From November through May, the kitchen runs a seasonal Omakase del Mar, a tasting built around Baja bluefin tuna and paired with sake.
