Cocina de Autor holds a title no other kitchen in Los Cabos can claim: the region's only Michelin one-star restaurant, awarded in the inaugural Michelin Guide Mexico and held since. It is the signature fine-dining room of Grand Velas Los Cabos.
The kitchen is led by Dutch chef Sidney Schutte, working with chef Francisco Sixtos. The format is a playful 8-to-10-course tasting menu that spotlights fine produce, local meats, and seafood, layering several taste sensations into single dishes.
The evening is staged with intent. It opens with a cocktail at the Cocina de Autor bar before guests are led to the table, and Schutte's four years cooking in Asia surface in the global touches that follow.
A few practical notes shape the visit: the dress code is elegant, with collared shirts, trousers and closed shoes for men and dresses, skirts or evening trousers for women, and no beach sandals, tank tops or shorts. The room is for guests 18 and over, and advance reservations are required. Cocina de Autor serves dinner from 6:00 PM to 11:00 PM, non-resort diners are welcome with a reservation, and because serving days can vary, it is worth confirming the night when you book.
