The Cabo restaurant association's own festival puts sixty kitchens in one place for one night. Treat it as a scouting exercise, and leave the two nights after it open.

Sabor a Cabo is the one event on the Los Cabos calendar that is not aimed at visitors.
It started as a local fundraiser, it is run by the Cabo restaurant association, and the
money goes to the local fire department and community programmes. The result is that
almost every kitchen in town shows up, in one place, on one night.
Confirm the 2026 date and ticketing at saborcabo.com. It sits in late November or early
December most years, and there are usually two events: the main Sabor a Cabo in Cabo San
Lucas and a Rural edition in the Sierra foothills earlier in the season.
The reason to plan around it is that the festival tells you what to book for the rest of
the week.
What the festival actually is
It is a tasting event, not a dinner. Sixty or so restaurants set up stations, you walk
between them, and drinks are included in the ticket. It runs a few hours and it is
crowded.
That format has two consequences worth planning for.
The first is that you will eat one bite from thirty kitchens and want a full table at
three of them. The festival works best as a scouting exercise, so leave the following
two nights open rather than booked.
The second is that the whole restaurant scene is working that night. Kitchens send their
teams to the festival, so the town's dining rooms run thinner than usual on the evening
itself. Book the festival night for the festival and nothing else.
The kitchens worth following up on
Most of the names below pour at Sabor a Cabo in a normal year. These are the ones where
the full table is a different experience from the tasting station.
Flora's Field Kitchen is the clearest case. The
station gives you one plate; the farm gives you an afternoon, a working field, and the
reason the plate tasted the way it did. Go for lunch the day after.
Acre is the other farm-driven room, set under palms in the
San Jose valley, and it runs a very different evening from its festival presence.
Cocina de Autor at Solaz holds the only
Michelin star in Los Cabos and is a tasting menu, which makes it the hardest thing to
represent at a walk-around festival and the most worthwhile follow-up.
Metate in El Tezal holds a Bib Gourmand for antojitos
and wood-fire cooking, and NAO is the
Michelin-recommended Mediterranean room in downtown San Jose that makes almost everything
in house.
Don Sanchez is Edgar Roman's Baja-Mexican fine
dining in San Jose, and Manta is Enrique Olvera's
oceanfront room at The Cape.
The San Jose side, which the festival points you toward
Sabor a Cabo runs in Cabo San Lucas, but a lot of the cooking it celebrates happens
thirty minutes up the road in San Jose del Cabo.
Los Tres Gallos does heritage Mexican in a
courtyard and is the most straightforwardly enjoyable table in the old town.
Maria Corona does scratch mole and tableside
guacamole. Comal at Chileno Bay is the open-air
contemporary Mexican room on the Corridor between the two towns.
San Jose also runs an Art Walk on Thursday evenings through the season, which pairs well
with a late dinner in the old town and is free.
The rooms for the night itself
If you are in town for the festival and want one proper dinner that is not a follow-up,
book it for the night before.
El Farallon in the Pedregal cliffs and
Sunset Monalisa above El Arco are the two
view dinners, and both want an hour before sunset.
Cocina del Mar at Esperanza is the quieter
Corridor option.
For a night that turns into something else,
Rosa Negra and
Chambao both run dinner into a show, and
Mandala downtown takes it from there.
How to plan around it
Buy festival tickets early and treat that evening as fully committed. It is a walk-around
event and it will absorb the whole night.
Book the night before, not the night of. The town's kitchens are at the festival.
Leave the two nights after open. That is the point of going: you will have found three
kitchens you want a real table at, and you cannot know which three in advance.
