Manta is the signature oceanfront restaurant of The Cape, a Thompson Hotel, and it carries a serious pedigree: the concept comes from Enrique Olvera, the Mexican chef behind Pujol and Cosme. Now branded Manta by Enrique Olvera, the day-to-day kitchen is led by chef de cuisine Abisai Sanchez, and the restaurant is listed in the MICHELIN Guide for Mexico.
The cooking is contemporary Mexican, shaped by Peruvian influences and a refined Japanese sensibility, and built on local, sustainable Baja ingredients. The name carries a double meaning: the manta ray nods to the seafood focus, while 'manta' (Spanish for blanket) points to the comfort the kitchen chases.
You can go two ways here. The a la carte menu runs from tuna sashimi and Peruvian cebiche to Korean fried chicken, fish tempura tacos and a chile-crusted ribeye, and a Chef's Menu is offered per person for a table that wants the kitchen to choose. A separate Handroll Bar serves a set sequence built around handrolls such as tuna with chile morita mayo and shrimp with kimchi, closing with a smoked-fish dashi and mochi with sweet corn ice cream.
Dinner is served nightly from 5:30 PM to 11:30 PM in a restrained room designed by JSa Arquitectura with Olvera, in front of a dramatic exhibition kitchen and looking out to the Arch at sunset. The drinks list leans into mezcal, tequila and sake, with cocktails such as a mezcal Negroni and a Casa Dragones pitaya.
