Carbon Cabron is a Michelin Guide Recommended wood-fired grill on the corridor side of San Jose del Cabo, billed as "The Great Grill of Baja Sur." The whole menu turns on mesquite embers and smoke, and everything is cooked over the grill.
The concept comes from chef Alfonso 'Poncho' Cadena, a Hermosillo native who is also behind La Leche in Puerto Vallarta and Hueso in Guadalajara. The kitchen works with organic vegetables and ingredients found only on the peninsula.
Built for sharing, the menu splits into vegetables, seafood and 'Black Market' meats, running from sweetbreads with grilled lemon and a coffee-rubbed Kurobuta pork chop to a smoked short rib with dark beer glace and the T-Rex, a New York or rib eye cut. Tempura onions with habanero aioli and black recado, a tribute to chef Roberto Solis, sit among the vegetables, and a Chef's Menu moves through vegetables, fish and seafood, the Black Market and dessert for the full arc.
The dining room is moody and very dark, with library-style stacks of mesquite wood that keep every eye on the food and the flame. Dinner runs daily from 6:00 PM to 10:00 PM, and the team also cooks private dinners at guests' own properties, and Poncho Cadena can be invited to join in person.
