Carbon Cabron is a Michelin Guide Recommended wood-fired grill on the corridor side of San Jose del Cabo, styled as an 'Asador de las Californias.' The whole menu turns on a mesquite-wood fire that lends a fine smoked flavor across every course.
The concept comes from chef Alfonso 'Poncho' Cadena, a Hermosillo native who marries French technique to Baja product and earlier opened La Leche in Puerto Vallarta and Hueso in Guadalajara, with a stint at Napa's French Laundry along the way. In the open kitchen he works three separate grills, one for vegetables, one for seafood, one for meat.
