Metate takes its name from the stone traditionally used to grind maize, and that reverence for the basics runs through everything the kitchen sends out. Set in El Tezal, across the highway from the line of hotels and down a dirt road, it has earned a Michelin Bib Gourmand in the Mexico selection for cooking that punches well above its price. Chef Abraham Tamez runs the kitchen.
The menu is built on antojitos and wood-fire grilled meats, the kind of Mexican cooking that rewards good ingredients and a hot fire. The Tacos Baja show the style: blue-corn tortillas cradling flaky white fish fried in a striking squid-ink batter, then finished with pickled cabbage.
The setting is a real part of the draw. A white-stucco entry opens onto a tree-shaded stone patio strung with lights, anchored by an open-air kitchen and a tiled bar. It feels relaxed and personal, closer to a neighborhood favorite than a resort dining room.
Beyond the regular menu, Metate runs guided mezcal and tequila tastings paired with house favorites such as the Cochiloco and the taco de costilla, and a six-course Chef's Table menu with wine pairings. The kitchen is open daily from 2:00 PM to midnight, and on Saturdays and Sundays breakfast and brunch start at 9:00 AM.
