El Farallon is carved straight into the granite cliffs of the Pedregal headland at Waldorf Astoria Los Cabos Pedregal, on the wild Pacific side of Cabo San Lucas. The concept is ocean-to-table in the truest sense. The day's catch comes straight from local fishermen and is written up on a large chalkboard, then grilled to order. You choose your fish, shrimp, scallops, lobster, or steak, and the sea bass is a perennial favorite. Every meal opens with a trio of appetizers and your pick of sides, so dinner builds from the first minute.
Before or after the meal, the Champagne Terrace pours a rotating collection of around 20 labels, from Blanc de Blancs to rose to vintage, available by flight, glass, or bottle. It is the kind of perch built for a slow toast as the light goes golden.
