El Farallon is carved into the cliffs of the Pedregal headland at Waldorf Astoria Los Cabos Pedregal, on the Pacific side of Cabo San Lucas. Tables sit tucked among ancient rock above the water, the open-air kitchen hums alongside, and the sound of crashing surf rolls in under every course.
The concept is ocean-to-table in the truest sense. The day's catch comes from local fishermen and is laid out on shaved ice, where the team weighs each choice on an old-fashioned scale and helps pair the sides. Dinner opens with a fresh salad and a duo of chef-selected appetizers, one raw and one hot, before a main such as sea bass, red snapper, bluefin tuna, shrimp, lobster, beef fillet, or surf and turf.
Before or after the meal, the Champagne Terrace pours a curated collection of 20 always-changing champagnes, by three-flight tasting, glass, or bottle, from 3:00 PM. It is also home to Savor the Sea, a pairing of caviar, shellfish and Baja seafood with champagne.
Dinner runs from 5:00 to 10:00 PM, with live entertainment from 6:00 to 9:00 PM. For a true occasion, El Farallon By The Sea leads guests down candlelit steps to a private table in the sand for up to four, offered as a separate experience from the main room.
