Chambao is Grupo RosaNegra's Polanco grillhouse, on the luxury retail stretch of Avenida Presidente Masaryk. The group runs sister rooms in Tulum, Los Cabos, Madrid, Dubai and Mykonos, and the Mexico City room follows the same formula: a serious steak and seafood kitchen wrapped inside a nightly production of music, fashion and performance.
The kitchen builds around premium aged beef, including cuts from Creekstone Farms, Australian wagyu and Kobe, set against a raw bar and wood grilled seafood. Slow cooked short rib is one of its calling cards, and the group's showpiece plates, the Lucifer and the Mamut, arrive with tableside theater that stops the room. Mixology is a real program here rather than an afterthought, heavy on agave, Champagne and large format pours.
