Masaryk grillhouse with runway shows and prime cuts
Chambao is a steak and seafood grillhouse on the luxury retail stretch of Avenida Presidente Masaryk in Polanco. The kitchen builds around premium aged beef, including cuts from Creekstone Farms, Australian wagyu and Kobe, set against a raw bar and wood grilled seafood.
Slow cooked short rib is one of its calling cards, and its showpiece plates, the Lucifer and the Mamut, arrive with tableside theater that stops the room. Mixology gets equal attention here, heavy on agave, Champagne and large format pours.
The room layers boho chic textures over rustic materials, antique wood and copper detailing, under low light. Doors open at one in the afternoon and the kitchen and bar keep working until two in the morning, seven days a week, and the evening escalates with a resident DJ, live flamenco guitar, runway walks and fire performers. It is a celebration room first, which is why birthday tables and corporate groups fill it midweek as well as on Friday and Saturday.
Chambao also runs its own ticketed event nights built around the same format, such as a New Year's Eve dinner with live shows and a DJ.
