The day is straightforward Riviera pleasure: sunbeds and swimming, a long lunch on the sand. The evening is where Miramar shows its ambition. Chef Valerian Mangione, who trained at Hotel du Cap-Eden-Roc, Epicure at Le Bristol in Paris and Byblos in Saint-Tropez, runs a crudo bar and caviar service, dry-aged cuts and wild-caught fish, tableside and flambeed dishes, all backed by a wine list of more than four hundred references. As the light drops the beach turns into a full dinner with DJ sets and live performance, the show starting at the table rather than on a stage.
The individual note is exactly that combination: a caviar-and-crudo beach with a twenty-year Croisette track record and a chef of real hotel-dining pedigree, rather than a party-first plage. It is elegant and sun-drenched, oriented to the open bay.
Miramar runs a full day-and-evening operation in the spring-to-autumn season; from October through April the beach is daytime only, with no winter dinner service.
